Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 bell peppers (mixed colors), chopped
  • 3 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 cups cooked white rice
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat olive oil and brown the ground beef. Drain excess grease.
  2. Add chopped onion and bell peppers. Cook until softened, about 5–7 minutes. Stir in garlic and cook for 1 minute.
  3. Pour in crushed tomatoes and beef broth. Add Italian seasoning, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in cooked rice and heat through.
  6. Serve hot with shredded cheese and parsley on top.

Notes

  • Add rice just before serving to avoid over-absorption.
  • Use ground turkey or chicken for a lighter version.
  • Freeze without rice and add fresh when reheating.
  • Serve with garlic bread for a complete meal.
