- 1 lb ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 3 bell peppers (mixed colors), chopped
- 3 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups beef broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 cups cooked white rice
- 1/2 cup shredded cheddar cheese (optional)
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil and brown the ground beef. Drain excess grease.
- Add chopped onion and bell peppers. Cook until softened, about 5–7 minutes. Stir in garlic and cook for 1 minute.
- Pour in crushed tomatoes and beef broth. Add Italian seasoning, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in cooked rice and heat through.
- Serve hot with shredded cheese and parsley on top.
Notes
- Add rice just before serving to avoid over-absorption.
- Use ground turkey or chicken for a lighter version.
- Freeze without rice and add fresh when reheating.
