Steak Queso Rice

Steak queso rice became one of my favorite indulgent dinners after a long workday when I was craving something bold and satisfying without ordering out I had leftover rice some steak in the fridge and a block of cheese just waiting to be used. I didn’t plan anything fancy I just threw it together and hoped for comfort in a bowl.

Steak Queso Rice

The result was better than comfort it was the perfect combo of tender juicy steak creamy melted queso and fluffy rice all topped with fresh tomatoes and herbs ever since that first bite I’ve been making it on repeat whenever I want something rich and filling without too much effort it’s the kind of meal that feels like a splurge but is totally doable on a weeknight.

Ingredients

Here’s what I use to make this ultra-satisfying meal. Feel free to adjust the toppings or queso to suit your taste!

  • Steak (like flank or sirloin) – The juicy flavorful star of the dish that’s seared and sliced.
  • Cooked rice – The fluffy base that soaks up all the cheesy goodness.
  • Queso dip – Melts over the steak for creamy bold flavor in every bite.
  • Cheddar cheese – Optional but adds extra richness to the queso.
  • Garlic powder – Enhances the steak’s seasoning and boosts overall flavor.
  • Salt and pepper – Simple essentials to season the meat just right.
  • Olive oil – Helps get a good sear on the steak while keeping it juicy.
  • Diced tomatoes – Adds a fresh juicy bite to balance the richness.
  • Fresh cilantro – Brings a bright herbaceous pop on top.
  • Sour cream – Optional for a cool creamy finish on top.

Instructions

Step 1:

I start by patting the steak dry and seasoning it generously with salt pepper and garlic powder on both sides.

Step 2:

In a hot skillet I heat a bit of olive oil and sear the steak for about 3 to 4 minutes per side depending on thickness until it reaches my preferred doneness then I let it rest for a few minutes.

Step 3:

While the steak rests I heat the queso in a small saucepan over low heat until it’s melted and smooth if I want extra cheesiness I stir in a bit of shredded cheddar too.

Step 4:

I warm up the cooked rice and divide it onto plates or bowls spreading it out into a fluffy base.

Step 5:

Once the steak has rested I slice it thinly against the grain for the most tender bite.

Step 6:

I layer the sliced steak over the warm rice and drizzle the hot queso generously over the top letting it melt down into the grains.

Step 7:

To finish I sprinkle on diced tomatoes fresh cilantro and a dollop of sour cream if I want that extra creamy touch.

Tips

If you want to spice it up I recommend adding a splash of hot sauce or chopped jalapeños to the queso while it melts. I’ve also made this with leftover grilled steak and it still turns out delicious and satisfying. For extra veggies try layering sautéed onions or bell peppers in between the rice and steak.

Ways to Serve

I love serving this steak queso rice in a big bowl with tortilla chips on the side or turning it into a burrito filling wrapped in a warm tortilla. It’s also great for meal prep – just keep the queso separate and heat before serving.
