  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 1/2 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1/2 cup mini marshmallows
  • 1/2 cup milk chocolate chips
  • 1/4 cup mini chocolate chips


Instructions

  1. Preheat oven to 350°F and line baking sheet with parchment paper.
  2. Cream butter, brown sugar, and granulated sugar until fluffy. Add pumpkin, egg yolk, and vanilla. Mix well.
  3. In another bowl, whisk flour, baking soda, pumpkin spice, and salt. Add dry ingredients to wet and mix just until combined.
  4. Drop dough using a cookie scoop onto baking sheet. Flatten tops slightly.
  5. Bake for 10–12 minutes until edges are set.
  6. Immediately press marshmallows and chocolate chips onto warm cookies.
  7. Cool on baking sheet 5 minutes before transferring to rack.
