Step 5:
Once the pasta is cooked I stir in half of the shredded cheddar cheese then I top the dish with the remaining cheese and cover until it melts.
Step 6:
I serve it hot with a dollop of sour cream and garnish with sliced jalapeños and green onions for that final taco-inspired flair.
