It’s the perfect blend of comfort and celebration and packed with flavor from gooey cheese and smoky bacon and tangy sour cream. Whether served as a side or the star and it never lasts long.

Instructions

Step 1: Cook the Potatoes

Step 3: Make the Mixture

Once the potatoes are cooked and drained and I mash them with butter and sour cream and cream cheese and a bit of salt and pepper. Then I fold in half the cheddar cheese and some of the bacon bits.

Step 4: Assemble the Casserole

I spread the mashed mixture into a greased baking dish and then top it with the remaining cheese and bacon.

Step 5: Bake

I bake the casserole at 375°F for about 20 to 25 minutes until the cheese is melted and bubbly and slightly golden on top.

Step 6: Garnish and Serve

Just before serving and I sprinkle chopped green onions over the top for a fresh and colorful finish.
