Ingredients

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 1.5 lbs baby potatoes, halved
  • 3 cloves garlic, minced
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste


Instructions

  1. Boil potatoes for 8 minutes until just tender. Drain and let dry.
  2. Season steak cubes with salt and pepper. Let rest at room temperature.
  3. In a hot skillet, cook potatoes in olive oil until golden and crispy. Set aside.
  4. Sear steak in the same skillet until browned on all sides, 2–3 minutes per side.
  5. Lower heat, add butter and garlic, stirring until fragrant.
  6. Return potatoes to pan, toss everything in garlic butter, and sprinkle with parsley.
