Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can kidney beans, drained
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 12 oz elbow or cavatappi pasta
  • 2 cups shredded cheddar cheese
  • 3 cups water or broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 green onions, sliced


Instructions

  1. Heat olive oil; cook onion and garlic until soft.
  2. Add ground beef; cook until browned, season with salt and pepper.
  3. Stir in chili powder and cumin.
  4. Add tomatoes, tomato sauce, beans, and water or broth; stir well.
  5. Bring to boil; add pasta and stir.
  6. Simmer 12–15 minutes until pasta is tender and sauce thickens.
  7. Stir in half the cheese; sprinkle remaining on top and cover to melt.
  8. Serve hot, garnished with green onions.

Notes

  • Add jalapeños for extra heat.
  • Swap ground beef for turkey or use extra beans for vegetarian.
