- 1 lb ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can kidney beans, drained
- 1 can diced tomatoes
- 1 can tomato sauce
- 2 tbsp chili powder
- 1 tsp cumin
- 12 oz elbow or cavatappi pasta
- 2 cups shredded cheddar cheese
- 3 cups water or broth
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 green onions, sliced
Instructions
- Heat olive oil; cook onion and garlic until soft.
- Add ground beef; cook until browned, season with salt and pepper.
- Stir in chili powder and cumin.
- Add tomatoes, tomato sauce, beans, and water or broth; stir well.
- Bring to boil; add pasta and stir.
- Simmer 12–15 minutes until pasta is tender and sauce thickens.
- Stir in half the cheese; sprinkle remaining on top and cover to melt.
- Serve hot, garnished with green onions.
