Crockpot Hamburger Potato Casserole

Crockpot Hamburger Potato Casserole brings back memories of those chilly school nights when I’d come home to the smell of something warm and hearty simmering in the kitchen and the scent alone made the whole house feel comforting. My mom used to whip this up when she needed a filling dinner that didn’t require constant attention and we’d gather around the table with big appetites and even bigger smiles.

I’ve since made it my own and tweaking it over the years to find that perfect balance of creamy and savory and cheesy and every time I take a bite and it still feels like home. The slow cooker does most of the work which is a lifesaver during busy weeks and it’s now one of those no-fuss favorites I reach for when I want a cozy meal that pleases everyone.

Ingredients

Here’s what I use for this recipe. You can always make substitutions if you prefer!

  • Ground beef – The hearty base that adds protein and rich flavor
  • Russet potatoes – Sliced thin to become tender and buttery as they cook
  • Onion – Adds a sweet and savory depth to the casserole
  • Cream of mushroom soup – Gives the dish that creamy comfort food texture
  • Milk – Helps thin the soup and makes the layers silky
  • Shredded cheddar cheese – Melts into a gooey topping for irresistible flavor
  • Salt and pepper – Essential for seasoning every layer just right
  • Garlic powder – Adds subtle flavor that complements the beef
  • Paprika – For a warm and smoky undertone

Tools You’ll Need

  • Crockpot/Slow cooker – The main cooking vessel that slowly melds the ingredients together for rich flavor
  • Sharp knife – To slice potatoes and chop onions evenly
  • Cutting board – A stable surface for prepping your veggies
  • Mixing bowl – For combining the creamy sauce ingredients before layering
  • Wooden spoon or spatula – Helps to spread and layer the ingredients gently without breaking the potatoes

Instructions

Step 1:

I begin by browning the ground beef in a skillet over medium heat and I season it with salt and pepper and garlic powder and cook it until no longer pink and then I drain the excess fat.

Step 2:

While the beef is browning I slice the potatoes into thin rounds using a sharp knife or mandoline and I like them about 1/8-inch thick so they cook evenly in the crockpot.

Step 3:

In a mixing bowl I combine the cream of mushroom soup with milk and paprika and stir until smooth and this creates a creamy sauce that brings all the layers together.

Step 4:

I spray the inside of my crockpot with nonstick spray and start layering and first a layer of sliced potatoes then a portion of the cooked ground beef and a sprinkle of chopped onions and a few spoonfuls of the soup mixture and I repeat the layers until all the ingredients are used up.

Step 5:

I top it all with a generous layer of shredded cheddar cheese and then cover and cook on LOW for about 6 to 7 hours or on HIGH for 3 to 4 hours until the potatoes are fork-tender and everything is bubbling.

Step 6:

Once it’s done I let it sit for 10 minutes with the lid off so it can firm up slightly before serving and that helps the layers stay together on the plate.

Tips

If you want to switch things up I sometimes use cream of cheddar soup or even cream of celery for a different flavor twist. I also recommend slicing your potatoes as evenly as possible so they cook at the same rate. For extra flavor I’ve added chopped bell peppers or even a handful of frozen peas for a pop of color and texture.

Ways to Serve

This Crockpot Hamburger Potato Casserole is delicious on its own but I love serving it with a simple green salad or steamed green beans to balance out the richness. It also goes great with crusty bread or dinner rolls to soak up the creamy sauce. Leftovers reheat beautifully making it a great choice for meal prepping or packing in lunchboxes the next day.
