Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt, to taste
  • Black pepper, to taste


Instructions

  1. In a skillet, brown ground beef over medium heat. Drain fat.
  2. Sauté onions, garlic, and bell pepper until soft.
  3. Transfer beef and veggies to crockpot.
  4. Add beans, diced tomatoes, tomato paste, beef broth, and spices.
  5. Stir well to combine.
  6. Cook on low for 6–8 hours or high for 3–4 hours.
  7. Adjust seasoning before serving and add desired toppings.

  • Use ground turkey or chicken for a lighter version.
