- 8 small Yukon gold potatoes
- 2 tbsp olive oil
- 2 tbsp melted butter
- 2 garlic cloves, minced
- 1/2 tsp paprika
- Salt, to taste
- Black pepper, to taste
- Chopped fresh chives or parsley, for garnish
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Place each potato between two wooden spoon handles and make thin slices across without cutting through the bottom.
- Melt butter with olive oil in a small saucepan and add garlic and paprika.
- Brush the potatoes thoroughly with the garlic butter, making sure it gets between the slices. Season with salt and pepper.
- Bake for 45–55 minutes, brushing with more garlic butter once or twice during baking.
- Remove when edges are crispy and golden. Garnish with fresh chives or parsley and serve warm.
Notes
- Dry the potatoes thoroughly before slicing for better crisping.
- Use smaller potatoes for faster and more even cooking.
- Finish under the broiler for extra crisp edges—just watch closely!
- Leftovers can be stored and reheated in the oven or air fryer.
