- 8 oz spaghetti
- 1 cup sliced mushrooms
- 2 cups fresh spinach
- 2 cloves garlic minced
- 3/4 cup grated Parmesan cheese
- 1 cup heavy cream
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook spaghetti in salted boiling water until al dente. Reserve 1 cup of pasta water and drain.
- Heat olive oil and butter in a skillet over medium heat. Add mushrooms and cook for 7 minutes until browned.
- Add garlic and sauté for 1 minute.
- Pour in heavy cream and let simmer for 3–4 minutes to thicken slightly.
- Stir in Parmesan cheese until melted and smooth.
- Add spinach and cook until just wilted. Season with salt and pepper.
- Add cooked pasta and toss with the sauce. Use pasta water to adjust consistency if needed.
- Serve hot with extra Parmesan on top if desired.
