Ingredients

  • 1 lb ground meat (beef, chicken, or turkey)
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro, chopped
  • Salt and black pepper, to taste


Instructions

  1. Mix ground meat, onion, garlic, breadcrumbs, egg, salt, and pepper in a bowl.
  2. Form into small meatballs.
  3. Heat olive oil in skillet, brown meatballs on all sides. Remove and set aside.
  4. In same skillet, sauté garlic and ginger briefly.
  5. Whisk in red curry paste and coconut milk until smooth.
  6. Add soy sauce and lime juice, simmer sauce to thicken slightly.
  7. Return meatballs to skillet, simmer 10–15 minutes until cooked through.
  8. Garnish with cilantro and serve hot.

Notes

  • Do not overmix meatball mixture to keep them tender.
  • Adjust curry paste for desired spice level.
  • Can add cream or peanut butter for extra richness.
