Ingredients

  • 2 chicken breasts
  • 250g fettuccine
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped green onions for garnish


Instructions

  1. Boil fettuccine in salted water until al dente. Drain and set aside.
  2. Season chicken with Cajun seasoning salt and pepper.
  3. Heat olive oil in a skillet and sear chicken 4–5 mins per side until cooked through. Slice and set aside.
  4. In same skillet melt butter and sauté garlic until fragrant.
  5. Add heavy cream and simmer. Stir in Parmesan and more Cajun seasoning if desired.
  6. Add pasta and toss until coated. Top with chicken and garnish with green onions.

Notes

  • Use half-and-half instead of cream for a lighter version.
  • Add sautéed veggies like peppers or spinach for extra nutrition.
