  • 4 medium zucchini sliced
  • 2 tbsp butter
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 tbsp all purpose flour
  • 1 1/2 cups milk
  • 1 cup gruyere cheese grated
  • 1/2 cup parmesan cheese grated
  • 1/2 cup breadcrumbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 375°F and grease a baking dish lightly.
  2. Melt butter in a skillet over medium heat and cook onion for 4 minutes until soft then add garlic and cook 30 seconds.
  3. Whisk in flour and cook 1 minute then slowly add milk while whisking until smooth and thick.
  4. Stir in gruyere cheese salt and pepper until melted then remove from heat.
  5. Arrange zucchini slices evenly in the baking dish.
  6. Pour sauce over zucchini making sure all slices are coated.
  7. Mix breadcrumbs with parmesan and sprinkle evenly on top.
  8. Bake for 30 minutes until bubbly and golden then rest 5 minutes before serving.
