It all started on a rainy Sunday afternoon when I was craving something warm and comforting and I didn’t want to make a whole loaf of bread so I decided to try something smaller and snackable and that’s how these Cheesy Pull-Apart Bread Bites were born. I pulled together simple ingredients I already had and before I knew it and the kitchen smelled like melted cheese and buttery garlic and pure happiness.

Ever since then and these little bites have become a go-to treat in my home and especially when I want to impress without spending hours in the kitchen. The soft and fluffy dough filled with gooey melted cheese is pure magic and with a golden crust on top and they’re incredibly satisfying to pull apart and share with family and friends.
Ingredients
- Here’s what I use for this recipe. You can always make substitutions if you prefer!
- All-purpose flour – Gives the dough structure and softness.
- Yeast – Helps the dough rise and makes it light and airy.
- Sugar – Just a touch to feed the yeast and balance the flavor.
- Warm water – Activates the yeast and brings the dough together.
- Olive oil – Adds richness and keeps the dough tender.
- Mozzarella cheese – The ultimate gooey and stretchy cheese center!
- Garlic – For that classic aromatic punch.
- Butter – Brushed on top for flavor and that beautiful golden finish.
- Parsley – Adds a fresh and colorful final touch.
- Salt – Enhances all the savory flavors.
Tools You’ll Need
- Mixing bowl – Essential for combining and kneading the dough.
- Wooden spoon or spatula – To stir the ingredients before kneading.
- Measuring cups and spoons – To get the right balance of ingredients.
- Kitchen towel – To cover the dough while it rises and keeps it warm.
- Baking dish or sheet – To arrange and bake the dough balls evenly.
- Pastry brush – Perfect for brushing butter on top for a golden crust.
- Oven – The final step to bring these cheesy bites to life!

Instructions
Step 1:
I begin by mixing warm water and sugar in a large bowl and then I sprinkle the yeast on top and let it sit for about 5 minutes until it gets foamy.
Step 2:
Then I stir in the olive oil and salt and gradually add the flour and mixing until a dough forms and kneading it gently for about 5 to 7 minutes until it becomes smooth and elastic.
Step 3:
I place the dough in a lightly greased bowl and cover it with a towel and letting it rise in a warm spot for about 1 hour or until it doubles in size.
Step 4:
Once the dough has risen and I punch it down gently and divide it into small pieces and flatten each piece and place a cube of mozzarella in the center and then pinch the dough closed around it.
Step 5:
I arrange the stuffed dough balls in a greased baking dish and close together but not too tight and then cover them again and let them rest for another 20 minutes.
Step 6:
While they rest and I preheat the oven to 375°F. Right before baking and I melt the butter and stir in minced garlic and then brush it over the top of the dough balls.
Step 7:
I bake them for 18 to 22 minutes or until the tops are golden brown and the cheese is oozing slightly and finally I finish with a sprinkle of chopped parsley.

If you want to mix things up and I’ve also tried stuffing these with sharp cheddar or even a bit of pepper jack for a spicy kick. Sometimes I’ll add a little Italian seasoning or garlic powder into the dough itself for extra flavor. And if you’re short on time and store-bought pizza dough works as a quick shortcut!
