Description

This easy cheesy broccoli rice casserole is the best weeknight comfort food! A quick, healthy dish idea that’s simple and satisfying. Great for meal prep, holiday dinners, or as a veggie-packed main dish. Best of all, it’s kid-approved and beginner-friendly!


Ingredients

  • 3 cups cooked rice
  • 3 cups fresh broccoli florets
  • 2 cups shredded cheddar cheese
  • 1 can cream of mushroom soup (10.5 oz)
  • 1/2 cup sour cream
  • 1 small onion, finely chopped
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • 2 tbsp butter
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch casserole dish.
  2. Steam or blanch broccoli until just tender and bright green.
  3. In a skillet, sauté onion in butter until softened.
  4. In a large bowl, combine rice, broccoli, sautéed onion, soup, sour cream, milk, half of the cheese, garlic powder, salt, and pepper.
  5. Spread the mixture in the baking dish and top with remaining cheese.
  6. Bake uncovered for 25–30 minutes until hot and bubbly.
  7. Optional: Broil for 2–3 minutes to brown the cheese on top.

  • Add cooked chicken to make it a full meal.
  • Use cream of chicken soup if preferred.
  • Top with breadcrumbs or crackers for crunch.
