- 3 cups cooked rice
- 3 cups fresh broccoli florets
- 2 cups shredded cheddar cheese
- 1 can cream of mushroom soup (10.5 oz)
- 1/2 cup sour cream
- 1 small onion, finely chopped
- 1/2 cup milk
- 1/2 tsp garlic powder
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F and grease a 9×13-inch casserole dish.
- Steam or blanch broccoli until just tender and bright green.
- In a skillet, sauté onion in butter until softened.
- In a large bowl, combine rice, broccoli, sautéed onion, soup, sour cream, milk, half of the cheese, garlic powder, salt, and pepper.
- Spread the mixture in the baking dish and top with remaining cheese.
- Bake uncovered for 25–30 minutes until hot and bubbly.
- Optional: Broil for 2–3 minutes to brown the cheese on top.
Notes
- Add cooked chicken to make it a full meal.
- Use cream of chicken soup if preferred.
- Top with breadcrumbs or crackers for crunch.
- Freezes well for make-ahead meals.
