Ingredients

  • Here’s what I use for this recipe. You can always make substitutions if you prefer!
  • Ground beef – Provides the protein and heartiness that make this dish satisfying.
  • Cooked rice – Acts as the base and ties all the flavors together with its fluffy texture.
  • Bell peppers (red, yellow, green) – Adds color, sweetness, and a bit of crunch to the dish.
  • Onion – Brings a warm, savory depth to the skillet.
  • Garlic – Enhances the aroma and gives a nice savory kick.
  • Soy sauce – Adds umami and helps season the dish.
  • Olive oil – Used to sauté the vegetables and beef to perfection.
  • Green onions – Offers a fresh garnish and a pop of brightness.

Tools You’ll Need

  • Large skillet – Essential for cooking everything in one pan and getting even heat distribution.
  • Wooden spoon or spatula – Great for stirring and breaking up the beef without damaging your pan.
  • Cutting board – For safely chopping the vegetables and aromatics.
  • Knife – To cut the bell peppers, onions, and green onions cleanly.
  • Small bowl – For mixing any sauces or seasonings before adding them to the skillet.

Instructions

Step 1:

I begin by heating a bit of olive oil in a large skillet over medium heat then I add the diced onions and sauté them until they start to soften.

Step 2:

Next I add the ground beef and break it up with a spoon as it cooks until it’s browned and no longer pink.

Step 3:

Once the beef is cooked I stir in the minced garlic and let it cook for about a minute so the aroma really blooms.

Step 4:

Then I toss in the chopped bell peppers and continue cooking for another 5-6 minutes until they’re just tender but still a little crisp.

Step 5:

After that I add the cooked rice and pour in the soy sauce mixing everything together so the flavors really meld.

Step 6:

I let it all cook for another couple of minutes while stirring often then I top it with chopped green onions just before serving.

Tips

If you’re short on time you can use frozen bell pepper strips and pre-cooked rice. I’ve also added a splash of hot sauce for extra heat or even scrambled an egg into the mix for added texture and protein. It’s super flexible and that’s what I love about it!

Ways to Serve

I usually serve this beef and rice skillet as a complete meal on its own but it also pairs well with a side salad or a fried egg on top. For a lighter option you can spoon it into lettuce wraps or serve it in a tortilla for a fusion-style burrito.
