  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 3/4 cup Greek yogurt or sour cream
  • 1/2 cup milk
  • 1 cup finely chopped walnuts
  • 1/2 cup chopped pistachios
  • 1/2 cup honey
  • 2 tbsp water
  • 1 tsp lemon juice
  • 1 cup unsalted butter (for frosting)
  • 3 1/2 cups powdered sugar
  • 3 tbsp honey (for frosting)
  • 23 tbsp heavy cream


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch pans.
  2. Whisk together flour, baking powder, baking soda, salt, cinnamon, and cardamom.
  3. Cream butter and sugars. Beat in eggs and vanilla.
  4. Add yogurt and milk alternately with dry ingredients until smooth.
  5. Fold in walnuts and pistachios.
  6. Divide batter into pans and bake for 25–30 minutes.
  7. Make syrup by simmering honey, water, and lemon juice. Let cool.
  8. Brush warm cakes with syrup and cool completely.
  9. Whip frosting: beat butter until creamy, add powdered sugar, honey, and cream. Mix until fluffy.
  10. Layer and frost cake, decorate with extra nuts and honey drizzle.
